Some time ago, I made it my personal mission to become friends with fish. For most of my life I only had one or two pescatarian favourites in my culinary arsenal, but now I like to think that my repertoire has greatly improved … there are many delicious ways to fry a fish ;)
One of my absolute all-time favourite methods comes in the form French sole meuniere. My version uses gluten free flour for dredging, and dairy free margarine for cooking; and believe me the results are so simple and delicious it is an absolute must for any truly great pescatarian repertoire.
