Dairy Free Mac and Cheese with Roasted Kale Chips
Best Comfort Food Ever
This Sunday our menu plan called for the following
Protein: none, time for a protein-free comfort casserole
Vegetable: Kale
Side: Pasta, which of course became the main instead ;)
Gluten Free Dairy Free Mac and Cheese Please
Sometimes you have to put the health-trip aside and just indulge in one of the most satisfying comfort food casseroles you could ever have. Al dente macaroni noodles doused in a sumptuous dairy-free cream sauce and topped with gluten-free bread crumbs all baked until bubbling, golden and delicious … simply one of the most satisfying dishes on the planet!
Our main source of dairy-free cheese is from the Daiya product line, we have found that of all the fake cheeses available, theirs simply tastes the best and melts very easily. For the gluten free pasta any of your favourite products will do as well for the bread crump topping, so long as it tastes good enough to eat on it’s own.
Roasted Kale Chips
Maybe out of some sense of guilt I felt it necessary to have some sort of vegetable side dish to accompany this sinfully satisfying dairy free mac and cheese casserole. Fresh rinsed kale with stems removed, drizzled with a little oil and kosher salt then roasted in the oven and voila, a great little crunchy accompaniment for our Sunday dinner.
