Dairy Free & Gluten Free Pumpkin Pie Recipe – Made From Scratch With Delicious Roasted Pumpkin

Impulsive Culinarian’s Dairy Free & Gluten Free Pumpkin Pie Recipe

(Makes 1 Pie)

Ingredients

  • 1 Frozen Gluten Free Pie Shell
  • 1 Small Pumpkin
    • Roasted to yield 1 1/2 cups of pureed Roasted Pumpkin
  • 1 1/2 cups Dairy Free Milk
  • 1/2 cup Light / Golden Sugar
  • 1/4 cup Brown Sugar
  • 1 tbsp Cornstarch
  • 1/2 tsp Ground Cinnamon
  • 1/2 tsp Ground Ginger
  • 1/2 tsp Pure Vanilla Extract
  • 1/2 tsp Salt

Instructions

  • Roasting the Pumpkin
    • Preheat oven to 400°
    • Cut pumpkin in half
    • Drizzle the insides of each half with a bit of olive oil & a light sprinkling of salt
    • Place both halves face down on a parchment-lined baking sheet
    • Roast the pumpkin for 40 minutes
    • Let cool for a few minutes
    • Scoop out the roasted pumpkin flesh and transfer to a food processor
    • Puree until smooth
    • Measure out 1 1/2 cups and set aside
    • Freeze the remaining puree for later use
  • Making the Pie
    • Preheat oven to 350°
    • Add roasted pumpkin and all other filling ingredients to a large mixing bowl
    • Whisk together until thoroughly combined
    • Poor filling mixture into the frozen pie shell
    • Bake for 90 minutes
    • Let cool for 15 minutes
    • Transfer to the refrigerator for another hour or so

Nothing Beats Homemade Pumpkin Pie Made From Scratch

I spent most of my young culinary years assuming that roasting pumpkin was simply too difficult a chore to undertake. How incredibly surprised I was to learn it is probably one of the simplest baking tasks ever. Thankfully I’ve now spent almost as many cooking years enjoying this delicious ingredient, not to mention that it’s also very satisfying to use a pumpkin for something other than making jack-o’-lanterns! This delicious pumpkin pie recipe is not only incredibly satisfying, but also happens to be dairy free & gluten free, doesn’t get much better than that.
