Indian Aloo Gobi – Savoury Potatoes With Curried Roasted Cauliflower

Impulsive Culinarian’s Indian Aloo Gobi Recipe


  • 1 1/2 [ounds Potatoes, peeled, 1/4″ dice
  • 1 head Cauliflower Florets, trimmed, large dice
  • 2 tbsp Olive Oil
  • 1 tbsp Curry Powder
  • 3 tbsp Dairy Free Margarine
  • 2 Medium Yellow Onions, peeled, finely chopped
  • 4 cloves Garlic, thinly sliced
  • 2 tbsp Fresh Ginger, finely chopped
  • 2 tbsp Garam Masala
  • 1 tsp Brown Sugar
  • 1/2 cup White Wine
  • 2 large Tomatoes, peeled & seeded
  • 1 tbsp Fresh Coriander, chopped

Optional Ingredients

  • 1 tsp Crusehd Chilli Flakes … OR … 1 tbsp Sriracha Sauce (bit milder than chilli flakes)


  • Preheat oven to 400°
  • Add 8 cups warm water to a large pot and set burner to high heat
  • Add 2 tbsp salt to the warming potato water
  • Peel Y& chop potatoes, adding to the pot as you go
  • When potatoes come to a boil, reduce heat to medium and maintain a gentle boil for 15 minutes
  • In a medium mixing bowl, toss cauliflower florets with the 2 tbsp of olive oil, curry powder and a a bit of salt & pepper to taste
  • Spread seasoned cauliflower florets on a parchment-lined baking sheet
  • Roast the cauliflower for 20 minutes in the center rack of your 400° oven
  • Once potatoes are done, drain them in a colander, then add them to a clean medium-sized mixing bowl
  • Cover the potatoes with cold water and add a tray of ice cubes to the bowl, then set aside
  • When cauliflower is roasted, transfer to a clean bowl and set aside
  • Place a large non-stick skillet over medium heat
  • Add margarine and chopped onions to the hot skillet and saute for 10 minutes until just starting to brown
  • Add garlic, ginger, garam masala & any optional spicy seasonings to the skillet and saute for another minute, stirring frequently
  • Add white wine and chopped tomatoes to the skillet and saute for another 2 minutes, stirring frequently
  • Drain potatoes well using a colander
  • Add potatoes and cauliflower to the skillet and gently fold the mixture together until just combined
  • Add fresh coriander to the skillet
  • Reduce heat to low, cover and let simmer for 15 minutes
  • Correct seasonings with salt and pepper if necessary and serve over some of my quick & easy toasted cumin basmati rice
