Impulsive Culinarian’s Gluten Free Lemon Garlic Shrimp Fettuccine with Grilled Asparagus & Cherry Tomato Salad Recipe

Homemade Gluten Free Fettuccine Ingredients

  • 3/4 cup Corn Flour + extra for dusting
  • 3/4 cup Tapioca Flour
  • 3/4 cup Sweet White Rice Flour
  • 1/2 tbsp Guar Gum
  • 4 large Organic Eggs

Cherry Tomato Salad Ingredients

  • 2 cups Cherry Tomatoes, halved
  • 1 small Shallot, minced
  • 2 tbsp Good Olive Oil
  • Juice of 1 Lime
  • 2 tbsp chopped Fresh Basil
  • 1 tsp Organic honey
  • 1/2 tsp Kosher Salt
  • Freshly Ground Black Pepper

Lemon Garlic Shrimp Ingredients

  • 1 1/2 pounds Raw Shrimp, peeled, deveined & rinsed
  • Kosher Salt & Freshly Ground Black Pepper
  • 1/4 cup Dairy Free Margarine
  • 2 Shallots, thinly sliced
  • 4 Garlic Cloves, thinly sliced
  • Juice of 1 Lemon
  • 1/3 cup White Wine
  • 1/2 tbsp Organic Honey
  • 2 tbsp chopped Fresh Oregano
  • 2 tbsp chopped Fresh Flat Leaf Parsley
  • 3 ounces Dairy free White Cheese, finely grated
  • 1 tsp Kosher Salt
  • Freshly Ground Black Pepper

Grilled Asparagus Ingredients

  • 1 bunch Asparagus, trimmed
  • 2 tbsp Olive Oil
  • Kosher Salt
  • Freshly Ground Black Pepper

Gluten Free Pasta Instructions

  • Combine corn flour, tapioca flour, sweet rice flour and guar gum in a large mixing bowl, whisk together well
  • Empty flour mixture onto a large, clean work surface and form a well in the center
  • Crack eggs into center of the well and begin combining with clean hands
  • Firmly knead the dough until it forms a smooth ball with no dry bits left, around 10 minutes
  • Cut the dough into 4 equal pieces, leaving one aside to work with
  • Wrap the remaining pieces in plastic wrap to prevent it from drying
  • Flatten the quarter of pasta dough with your hands or a rolling pin until it is around 1/4″ thick
  • Use a pasta machine to flatten the dough to as thin a sheet as possible, around 18″ long
  • Cut the 18″ sheet in half (around 9″ long) and pass it through the fettuccine roller of your pasta machine
  • Twist the fettuccine into a small nest and repeat the process until all the dough is shaped into pasta, dusting with additional corn flour if needed
  • Set the nests of pasta aside to dry

Cherry Tomato Salad Instructions

  • Combine all cherry tomato ingredients in a mixing bowl
  • Transfer to a serving bowl and set aside

Lemon Garlic Shrimp Instructions

  • Peel, de-vein and thoroughly rinse the raw shrimp
  • Pat dry with paper towel and season with salt & pepper
  • Place in a covered glass container and refrigerate until needed
  • Place a large pot of heavily salted water over high heat
  • Warm a large non-stick skillet over medium heat
  • Melt the 1/4 cup of dairy free margarine in the skillet
  • When skillet is hot, saute the shallots for around 3 minutes, stirring occasionally
  • Add the garlic and saute for another minute
  • Saute the seasoned shrimp for around 1 1/2 minutes until cooked through
  • Transfer shrimp to a clean bowl and set aside, leaving as much of the onions & garlic in your skillet as possible
  • Add wine, lemon juice, honey & herbs to the skillet and let reduce for around 2 minutes … remove from heat once reduced to avoid burning
  • Add fettuccine nests to the boiling water and cook until al-dente (around 3 or 4 minutes)
  • Drain pasta and add to skillet, return skillet to medium heat and gently fold pasta until it is completely coated by the wine reduction
  • Add cheese, shrimp, salt & pepper to the skillet and gently fold together
  • Cover & set aside

Grilled Asparagus Instructions

  • Trim asparagus and toss in a shallow baking dish with olive oil, salt & pepper
  • Grill asparagus on the BBQ over medium heat for approximately 3 to 4 minutes per side
