Impulsive Culinarian’s Dairy Free & Gluten Free Creamy Lemon Asparagus Pasta With Shrimp & Fresh Herbs Recipe

Ingredients

  • 350 grams Gluten Free Penne Pasta
  • 1/4 cup Dairy Free Margarine
  • 4 Shallots, thinly sliced
  • 8 Garlic Cloves, thinly sliced
  • 1 Carrot, peeled, 2″ matchstick cut
  • 1 pound Asparagus, trimmed, cut into 2″ pieces
  • 12 Cherry Tomatoes, halved
  • 1 cup Fresh Peas (or frozen if fresh are unavailable)
  • 2 tbsp chopped Fresh Oregano
  • 2 tbsp chopped Fresh Coriander
  • 1/2 cup White Wine
  • Juice of 1 Lemon
  • 1 tbsp Good Quality Olive Oil
  • 3 ounces Dairy Free White Cheese, finely grated
  • 1/2 tbsp Kosher Salt
  • Freshly Ground Black Pepper to taste

Instructions

  • Heat a large pot of heavily salted water over high heat
  • Chop, slice and prepare all of your ingredients while the water comes to a boil
  • Cook penne according to package instructions and transfer to a bowl of cold water when done to cool
  • Warm a large non-stick skillet over medium heat
  • Add margarine & shallots to the warm skillet and saute for 3 minutes
  • Add garlic and saute for another minute
  • Add carrots and asparagus to the skillet, saute for another 6 to 7 minutes until they start to soften
  • Add tomatoes, peas, oregano & coriander to the skillet, stir to combine and simmer until warmed through, around 4 minutes
  • Drain cooked pasta and add to the skillet, fold together to combine
  • Add white wine and simmer until reduced, around 3 minutes
  • Add lemon juice, grated cheese, olive oil, salt & pepper and stir until cheese is melted
  • Serve immediately
