Impulsive Culinarian’s Roasted Thanksgiving Turkey Breast Recipe

(Serves 6 to 8)

Ingredients

  • 2 Turkey Breasts, preferably bone-in & skin-on, but boneless works as well
  • 4 tbsp Brown Sugar
  • 2 tbsp Montreal Chicken Spice
  • 1 tbsp Fresh Sage, finely chopped
  • 1 tbsp Fresh Rosemary, finely chopped
  • 1 tbsp Fresh Thyme, finely chopped

Instructions

  • Preheat oven to 400°
  • Clean & trim turkey breasts
  • Mix sugar, spice & chopped herbs in a large shallow casserole dish
  • Generously coat the turkey breasts all over by turning them into the rub mixture
  • Line a 10″ x 15″ baking sheet with parchment paper so that it comes up slightly on all ages
    • Lining the pan this way ensures that you will catch any juices that come out of the turkey breasts while they are roasting
  • Place a cooling rack on the lined baking sheet
  • Place the turkey breasts on the cooling rack
  • Roast in the center rack for around 30 minutes until the internal temperature reaches 140°
  • Transfer breasts and cooling rack to a grooved cutting board
  • Cover and let rest for 15 minutes
  • Reserve any juices from the baking sheet and set aside
  • Once the breasts have rested, reserve any juices that have accumulated on the cutting board
  • Slice the breasts in large 3/4″ slices, being careful to remove any bones
  • Transfer the sliced turkey breasts to a serving platter
  • Drizzle with the reserved drippings and serve immediately
