Roasted Herbed New Potatoes Recipe – Perfect Side For Any Special Occasion

Impulsive Culinarian’s Roasted Herbed New Potatoes Recipe

(Serves 6 to 8)

Ingredients

  • 2 1/2 pounds New Potatoes, washed, halved
  • 3 tbsp Olive Oil
  • 1 tbsp Fresh Thyme, finely chopped
  • 1 tbsp Fresh Rosemary, finely chopped
  • 1 tbsp Kosher Salt
  • 1 tbsp Light/Golden Sugar
  • 1/2 tbsp Onion Powder
  • 1/2 tbsp Garlic Powder

Instructions

  • Preheat oven to 400°
  • Weigh out exactly 2 and a half pounds (2 pounds and 8 ounces) of washed new potatoes
  • Cut the large potatoes in half and put them into a large mixing bowl
    • Small potatoes do not need to be cut in half, this maintains a uniform size throughout
  • Add olive oil and fresh chopped herbs to the mixing bowl
  • Only add the salt and remaining spices once your oven is pre-heated and you are ready to roast the potatoes
    • Adding salt too early will extract the water, making it difficult to get a nice browning on your potatoes
  • Add salt, sugar and remaining spices to the mixing bowl
  • Toss together well until all ingredients are thoroughly combined
  • Line a 10″ x 15″ baking sheet with parchment paper
  • Place the potatoes cut face down on the lined baking sheet
  • Roast on the center rack of your oven for 30 minutes
  • Using a spatula, carefully flip the potatoes in the baking pan and return to the oven for an additional 15 minutes
  • Serve immediately or keep warm in a covered casserole dish until ready to serve
