Healthy Chicken Chow Mein Recipe

Marinade Ingredients

  • 1 tbsp Soy Sauce
  • 1 tbsp White Wine
  • 1 tbsp Corn Starch

Main Ingredients

  • 1 pound Chicken Breasts, thinly sliced
  • 8 ounces Egg Noodles
  • 2 tbsp Coconut Oil
  • 2 Shallots, peeled & thinly sliced
  • 1 inch Fresh Ginger, peeled & finely chopped
  • 2 Garlic Cloves, peeled & thinly sliced
  • 6 ounces Bok Choy, rinsed & thinly sliced
  • 1 cup Bean Sprouts
  • 1/3 cup White Wine
  • 1/4 cup Vegetable Broth
  • 3 tbsp Soy Sauce
  • 1 tbsp Water + 1 tsp Corn Starch


  • Whisk marinade ingredients together well
  • Add sliced chicken pieces along with marinade mixture to an air tight container, mix well to coat pieces thoroughly, then seal and refrigerate for one hour
  • Prepare noodles according to package directions
  • Warm coconut oil in a large skillet or wok over medium-high heat
  • Add marinated chicken to the skillet and sauté until golden and just cooked through, around 3 minutes
  • Transfer chicken to a separate dish and set aside
  • Add a bit more coconut oil if necessary
  • Add shallots and ginger to the skillet and sauté while stirring for 2 minutes
  • Add garlic to the skillet and sauté for 1/2 a minute, stirring frequently
  • Add bok choy & bean sprouts to the skillet and saute while stirring for another minute
  • Add white wine to the skillet and stir to deglaze while the wine reduces
  • Add vegetable broth & soy sauce to the skillet, stirring for a minute to combine
  • Add cooked noodles to the skillet, stirring to combine, and warm through for 2 minutes
  • In a small bowl, whisk the cornstarch and water together, then add the slurry to your skillet
  • Transfer chicken and any reserved juices back to the skillet and gently combine
  • Warm through for one minute, remove from heat and serve immediately
