Canadian Chicken Pot Pie Recipe

Dough Ingredients

  • 1 1/4 cups flour, plus more for work surface
  • 1 tsp sugar
  • 1 tsp fine sea salt
  • 1/2 cup (1 stick) butter, cold & cut into large chunks
  • 1/4 cup ice water

Filling Ingredients

  • 2 tbsp Butter
  • 1 lb Russet Potatoes, peeled & 1/2” cubed
  • 6 Shallots, chopped
  • 4 medium carrots, roughly chopped
  • 1 Garlic Clove, finely chopped
  • 1/2 cup Flour
  • 3 1/2 cups Vegetable Broth, warmed
  • 1 tbsp Kosher Salt
  • Freshly Ground Black Pepper
  • 1/2 cup Frozen Peas
  • 1 1/2 lbs Chicken Thighs, trimmed & cubed

Dough Instructions

  • Blitz flour, sugar, salt & butter in a food processor until grainy
  • Add water and pulse a bit more
  • Form into a disc, wrap tightly in plastic wrap and refrigerate for 1 hour

Filling Instrustions

  • Preheat oven to 375
  • In a medium sauce pot add cubed potatoes to heavily salted water, sufficient to cover by at least 2″, then bring to a boil
  • Reduce heat to medium, cover slightly and simmer potatoes for 10 min
  • Drain potatoes and set aside
  • Warm butter in a large pot over medium-high heat
  • Add onions & carrots to the pot and sauté stirring occasionally until softened, around 8 minutes
  • Add garlic and sauté for another minute
  • Add flour to the pot and stir to combine with the vegetables
  • Slowly add broth, whisking to combine
  • Bring to a boil, then reduce heat to simmer until thickened fir 5 minutes
  • Add salt, pepper, frozen peas & cooked potatoes
  • Stir in raw chicken pieces then transfer filling to a 2 liter casserole dish
  • Roll out dough till it is slightly larger than your casserole
  • Lay the dough over top, sealing and crimping the edges as you go
  • Cut vents in the center, then place on a foil-lined baking sheet
  • Bake for 55 to 60 minutes at 375 until topping is golden brown
  • Let cool for 20 before serving
