Authentic Minestrone Soup Recipe – An Essential Spring Time Vegetarian Italian Classic

Impulsive Culinarian’s Vegetarian Minestrone Soup Recipe

Ingredients
  • 3 tbsp Olive Oil
  • 10 Shallots, thinly sliced
  • 3 Celery Stalks, thinly sliced
  • 2 Carrots, peeled & thinly sliced
  • 5 Garlic Cloves, thinly sliced
  • 1 large Zucchini, finely chopped
  • 1 cup White Wine
  • 6 cups Vegetable Broth
  • 1 cup Gluten Free Pasta
  • 1 can White Cannellini Beans, drained & rinsed
  • 1 can Red Kidney Beans, drained & rinsed
  • 1 large can Diced Tomatoes
  • 4 cups Baby Spinach
  • 2 tbsp Fresh Oregano, finely chopped
  • 1 tbsp Fresh Basil, finely chopped
  • 1 tbsp Kosher Salt
  • Freshly Ground Black Pepper to taste
Instructions
  • Warm broth in a medium sized sauce, then cover and let simmer over low heat  pan until needed
  • Warm a large stock pot over medium heat
  • Add olive oil to the stock pot
  • Saute shallots, celery & carrots in the stock pot until softened, stirring occasionally for around 8 or 9 minutes
  • Add garlic & zucchini to the mirepoix and saute for an additional 2 to 3 minutes, stirring occasionally
  • Add white wine and let reduce for 2 minutes
  • Add warm vegetable broth to the stock pot and bring to a gentle boil
  • Add pasta and all remaining ingredients to the broth and bring to a gentle boil, stirring occasionally
  • Once the soup comes to a boil, reduce heat to medium-low, cover partially and simmer until pasta is cooked
  • Correct seasonings if necessary and serve immediately
