Delicious Pumpkin Butter Tarts Recipe – Gluten Free & Dairy Free

Impulsive Culinarian’s Dairy Free & Gluten Free Pumpkin Butter Tart Recipe

(Makes 12 Tarts)

Tart Shell Ingredients

  • 1/4 cup Brown Rice Flour
  • 1/4 cup Masa Harina Flour
  • 1/4 cup Sweet White Rice Flour
  • 1/4 cup Tapioca Flour
  • 1/4 cup Potato Starch
  • 1/2 tsp Guar Gum
  • 1/3 cup Coconut Oil
  • 2 tbsp Honey
  • 1 Egg
  • 1 tbsp Cold Water

Tart Filling Ingredients

  • 1 cup Roasted Pureed Pumpkin
  • 1/2 cup Brown Sugar
  • 1/4 cup Dairy Free Margarine, melted
  • 1 Egg
  • 1 tbsp Corn Flour
  • 1 tbsp Tapioca Flour
  • 1/2 tsp Pure Vanilla Extract
  • 1/2 tsp Ground Cinnamon
  • 1/2 tsp Ground Ginger

Instructions

  • Spray a 12-muffin tin with non-stick cooking spray
  • Place all tart shell ingredients except the tbsp of cold water into a food processor
  • Blitz until thoroughly combined
  • Add 1 tbsp of cold water and pulse until the dough just comes together
  • Transfer the dough onto a large piece of parchment or wax paper
  • Form the dough into a disk
  • Cover with a large sheet of plastic wrap and roll the dough out until it is just under 1/4″ thick
  • Using a 3″ cookie cutter, or a glass, or large coffee mug, cut the dough into a dozen 3″ rounds
  • Carefully transfer the rounds to your muffin tin, using your fingers to shape them into each cup evenly, use the excess dough to repair any rips or tears
  • Place tart shells in the freezer for at least 15 minutes
  • Preheat the oven to 400°
  • Place all filling ingredients in a large bowl and whisk together well
  • Remove the tart shells from the freezer and fill each cup with an equal amount of the filling
  • Bake in the center rack for 20 minutes
  • Let cool completely for at least 30 minutes or more
  • Transfer tarts to a serving platter
